Preparation of Margarine
You only have to melt 15 g of coconut oil at around 45?C in a beaker. Now add 10 g of olive oil, 1 teaspoon of milk, a fresh egg yolk and a pinch of salt. Margarine is a water in oil emulsion. It is stabilised by the natural emulsifier lecithin from the egg yolk. What Is Margarine?Margarine is a butter-like product consisting of vegetable oils or animal fats and it has a minimum fat content of 80%. One can distinguish between margarine for baking, spreading or creamy margarine.
